Ingredients:
- 675g pumpkin, peeled and cut into 5cm (2in) pieces
- 2 cloves garlic, crushed
- Juice 1 lemon
- 1 teaspoon ground caraway
- 1 teaspoon coriander
- 1½ teaspoons salt
- 3 tablespoons olive oil
- 1 tablespoon finely chopped fresh mint or 1 teaspoon dried mint (garnish)
- Half fill a large saucepan with water and bring to the boil.
- Add the pumpkin pieces and simmer for 15 minutes or until soft.
- Strain into a colander.
- When cool enough to handle squeeze the flesh between your hands to extract as much water as possible.
- Transfer to a bowl and mash with a fork.
- Add all the remaining ingredients and mix thoroughly.
- Spread on a shallow serving dish and garnish with the mint.
- Serve cold
